Rice Culture in China
Rice: It is an annual germinate plant with monocot, like humidity, about 1 to 1.2m when maturate, with slender leaves of 50-100cm in length and 2-2.5cm in width. The rice flower is very small. When blossoming, the main squid will show arch shape, 30-50cm below will have flowers, most of them are pollinated by themselves and go to seed, that called as rice ear. Generally, the ear size is 5-12mm, with thickness of 2-3mm. After harvesting in autumn, threshing, drying and processing as well as husk removing through the machine, the crystal and while rice grains will be available. 

Rice is one of the important food crops for human. It has been cultivated and used as food for a quite long time. Nowadays more than half of the world populations eat rice, who mainly distributed in Asia, southern Europe and tropical America and parts of Africa regions. The total yield of rice is less than that of maize and wheat, ranking No.3 in the yield of food crops of the world, but it can meet the demand of most populations.

According to the excavation of archaeologists, a lot of charred rice seed and stems and leaves were found in Neolithic Sites of Yellow River and Yangtze River. In Hemudu Site of Yuyao, Zhejiang province in 1973, a large number of animal and plant remains and the remains of wooden architecture were found, moreover, inside the remains they found like-fresh rice and husk, some of them has good appearance, even the lines and palea on the husk are clear enough. The large number and well preservation are not only the No.1 in our country, even extremely rare in the prehistoric sites that found in the world. So the whole world is shocked immediately. 

Presently, Hemudu Site is the most persuasive discovery to enable us to completely identify the rice cultivated by human. The rice cultivation technology in that time has reached a very high level. A system featured by rice was originated from Yangtze River and evolved into "Rice Culture". So far, China is the big rice producer and consumer in the world, accounting for about one third of the total rice in the world. The people in Northern China like to eat flour, the Northeast people also like to eat rice, while the Southerners prefer to rice. When the origin of "Rice Culture" can be traced? The cultivated rice with 7,000-year history was once found in Hemudu Site of Yuyao, Zhejiang province; the trace of cultivated rice husk with 8,000-year history was once found in Jiahu Site of Wuyang County, Henan province; then the rice remains with 13,000-19,000 years-history was unearthed in Xianrendong of Wannian County, Jiangxi, Yuchanyan site of Dao County, Hunan, Miaoyan of Guilin, Guangxi and other cultural sites. Of which, the cultivated rice sample in Xianrendong is about 19,000 years ago, wild rice is possible. While the ancient rice in Yuchanyan of Dao County is identified as the most primitive cultivated rice evolving to the early cultivated rice, with combining characteristics of "Wild Rice, Indica Rice and Japonica Rice", called as the ancient cultivated rice of Yuchanyan, about 13,000 years ago, it seems that our ancestors had known rice cultivation and taken it as food at that time.

It is concluded from the archaeological proof; no doubt China is the origin of rice. The North China has long winter and short summer, while it is opposite for the South, so the humid climate there is suitable for rice cultivation. The North can see only one harvest in a year, while two harvests in the South of the Yangtze River and even three harvests in Hainan Island. Notwithstanding, the north is not short of high-quality rice, such as the rice in Yanbian and Jiaohe of Jilin, Heilongjiang Xiangshui Rice, Tianjin Xiaozhandao, Jingxi rice of Beijing and Taiyuan Fuxi rice, etc. Chinese rice is spread to the world as the cultural envoy, east to Japan and Korean peninsula, south to Southeast Asia's Thailand, Vietnam, Malaysia, Cambodia, Indonesia and Australia, the farthest to America. The people of some countries even eat rice in three meals. Most Asia countries like to eat rice. According to the statistics, the rice accounts for one fourth of the total grain output of the world, of 90% from Asia, and 90% rice is also consumed by Asians. From the world perspective of view, the main rice producers include China, Bangladesh, Indonesia, Myanmar, Japan, Thailand, India, Vietnam, Brazil, South Korea, Philippines and the United States. In the late of last century, the average annual rice output in the world was about 400 billion kg, covering about 0.145 billion ha. 95% rice in the world is used as food. A food cultural circle featured by rice is formed in the whole orient.
